Protein, Calcium & Omega Packed Gluten-Free Pregnancy Pancakes

My friend Jenna Binder and I have been creating and gathering pregnancy recipes for our pregnancy cookbook for a while now. I first met and worked with Jenna when she was pregnant with her son Max and am now taking her through her second pregnancy. While at her house the other day, she had just invented these delicious pancakes and was so excited to have me try. Needless to say I went nuts over them. I took home a huge bag and have them in my freezer. I love them, seriously YUMMY stuff!!! Great for pregnancy as they are high in protein, omegas and calcium and an awesome breakfast/snack for the kiddos too!!!

JENNA'S GLUTEN FREE PREGNANCY PANCAKES


- 6 cups of Pamelas gluten free baking and Pancake Mix

- ¼ cup of ground flax seeds

- 1 Container (16oz) of organic Cottage Cheese

- 8oz of Fage Yogurt 2% or Whole

- 5 eggs (I use 3 yolks)

- 2 ½ cups of freshly squeezed orange or tangerine juice

- 1 ½ teaspoons of vanilla extract

Mix all ingredients together.

I heat up canola oil in a skillet and make pancakes occasionally using blueberries, bananas or chocolate chips for a treat.

If you do not want to use so much juice, you can use almond milk or do half milk, half juice.

These pancakes are great for breakfast or a snack; they freeze well and can be heated up in the toaster to take on the go. You can also top with pure maple syrup.
